The first major Brazilian cookbook of its kind, Comida Brasil offers a comprehensive look into the full and incredibly diverse scope of Brazilian cuisine with its five important regions and dazzingly varied dishes, ingredients, techniques, background stories, and more.

Brazil is the fifth largest country in the world and is filled with unique and vibrant cultures all throughout its five diverse regions. With a plethora of regional recipes and techniques, Chef Emme Collins creates a comprehensive, accessible way to learn and explore the amazing food of her home country, Brazil. From its emblematic ingredients, such as cassava (in its many forms), açai, plantains, dendê oil, black beans, and rice to its distinct cultural contributions like churrasco-style grilled meats and seafood-forward feast celebrations, the food of Brazil has so much to offer.

Collins explains how the forces of immigration impacted the cuisine and how it presents itself in dishes like the Portuguese-influenced Salt Cod Fritters to the West African Beef with Okra and Dried Shrimp. There are iconic Brazilian dishes like Pão de Queijo (Brazilian Cheese Bread), Feijoada (the bean stew considered Brazil’s national dish), and Brigadeiro (chocolate truffles), but also twists on classics like Salt Cod and Shrimp Souffle, Tapioca Crepe with Zucchini, Mozzarella, and Arugula, and Passion Fruit Mousse. From Brazilian barbecue to slow cooked stews, the book will bring a taste of Brazil to home kitchens everywhere.
